I don't make New Year's Resolutions, but I'm always setting goals and attempting make our lives better. So why not rededicate myself to a few tasks with the new year? This is especially helpful after the hectic Fall and Winter we have had.
2009 was all about just keeping everyone alive and healthy, but not necessarily in shape. In 2010, both Dana and I are trying to get more exercise. He needs it for hunting and for his knees, I need it to get back in to my pants!
Growing up my best friend's mom always had the menu plan posted on the fridge. I loved seeing that Tuesday was pot roast, Thursday spaghetti and knowing that it was Swedish Meatball night on Friday when I was spending the night. Most of her meals were on a budget and cooked in the crock pot too. I know that my week goes so much better when I'm following a menu plan, but I struggle to create one. In theory it's not hard. You look at what you have on hand, write down what you want to eat for the week, and make a list of what you need to pick up. I some how look at that menu planning sheet (I have a nice magnetic pad from Betty Crocker) and break out into a cold sweat. What should we eat? I might get 2 days filled in, and never get further. But I'm going to make the effort to plan a lot more.
And on that note, with my lack of planning, dinner is often a rushed $5 pepperoni pizza. That's it, no veggies although I'd like to add some, the boys are crying to be fed and Kaia and Mo are vying for my attention, and I'm exhausted. So with my planning there will be more fruit and veggies on our menu. Even if it's just carrot and celery sticks, I'm going to try to have veggies with every dinner, and pack them into lunches.
I hope all of these efforts will make for a happier, less stressed Kihn home. Do you have any plans for the new year?

Monday:
Beef and Veggie Stir Fry, Rice, Egg roll
Tuesday:
Sloppy joes, Broccoli with cheese
Wednesday:
Beef Enchiladas with green sauce, fresh veggies with ranch for dipping
Thursday:
Sausage smothered in red cabbage and mashed potatoes
Friday:
Homemade Lasagna (sauce will cook in crock pot all day) and salad
Saturday:
Up in the air. My sister in law's Birthday is on Thursday, so we may have dinner some time this weekend.
Sunday:
Easy Huevos Rancheros

Sounds good! Menu planning had been a goal of mine for a while now. The New Year has been a great time for me to implement it too.
I'm proud of you.
The only thing I would add is invest in crock pot liners. It makes clean up so much easier.

I love menu planning! I would be lost at the store without it. One thing I try to do is to be flexible--I will make all the meals during the week, but I might switch around the days a bit according to how things are going.
I keep thinking that I should set up a permanent rotating menu like my Mom had, but I haven't done it yet. It would save a lot of time, though.
I wish that I could come eat Sloppy Joes with you :)
